Demonstrate how to make an Old Fashion with a lift to brighten up the flavour, break apart the sugars and adjust the mouthfeel.
Tips: Don’t use a lot of sugar, importance of dilution and citric acid solution.

Trevor Burnett is a proud Canadian-West Indian, who currently resides in Toronto. He has travelled the globe extensively as an ambassador of spirits and the culture of cocktails and is well known for his passion for adventure and his innate sense of hospitality.
Over the course of his career, he has travelled extensively to some of the most respected rum producing nations and distilleries across the Americas including Barbados, Guyana, Puerto Rico, and New Orleans.

His Caribbean roots can be traced to both Barbados and Guyana and his affection for traditional ingredients like sorrel, mauby, molasses, coconut water and cane juice can often be found in his cocktail recipes making his libations some of the most compelling and authentic offerings outside of the West Indies.

My name is Matt and I kicked off my Mixology journey during Covid-19. After months of isolation, I was itching for a proper Whisky Sour. I bought my first Shaker Set, watched some videos online, and that was the first domino that fell.
Now I am happily sharing these amazing recipes in Virtual & Private Classes. I am so grateful to connect people with the power of a well-crafted drink. I also specialize in private events and wedding services. On most nights you will catch me with a Whisky cocktail or a Craft Beer.
I Dont Make Drinks. I Make Smiles!
Cocktail 1 : GIN SOUR
- 2oz of Collective Arts Artisanal Dry Gin
- ¾oz lemon juice
- ¾oz simple syrup
- 2 dashes of angostura bitters
- 1 egg white or 1oz of aquafaba (optional)
- 1 lemon twist
Combine all of the ingredients into a shaker tin, dry shake for 5-10 seconds, add ice and shake for another 10 to 15 seconds. Double strain into a chilled cocktail glass , garnish with a lemon twist
Cocktail 2 : CLASSIC MOJITO
- 4-6 mint leaves
- 1oz Collective Arts Maple syrup barrel aged rum
- 1oz lime juice
- 1oz simple syrup
- 4-6oz soda water
- mint bouquet
- 1 lime slice
Slap four to six mint leaves and drop into a highball glass. Add the rum, lime juice, and simple syrup. Fill glass with ice, top with soda water and stir until it is fully mixed. Garnish with a mint bouquet and a lime slice.
